Into oza kuyenza

I’ll introduce you to traditional Cuban cuisine recipes that are more than a 100 years old.

Grilled fish, roast pork, ropa vieja, corn, tamal en cazuela, tostones, yuca con mojo, taro fritters, black beans with cilantro. The kind of flavor and scents that would make a Cuban salivate.

All paired with tropical fruits juices and delicious fresh Mojitos.

I’ll share with you some tricks of the trade, related to vegetables, meats, seafood, herbs, sauces and cereals such as rice which have had such relevance in Cuban diet for a century and more.

While we cook, we’ll discuss Cuban cuisine history and its impact in my restaurant’s identity and in the identity of my culinary art for the past 30 years.

An experienced chef and culinary creator, I am passionate about the tradition and flavors of my country.

Along with my friend Justo, I opened a few years ago “Ivan chefs Justo”, one of the most renowned restaurants in Havana.

After its success, I decided to roll the dices again and launched "Al Carbón", a place providing sharp contrasts with my first, but also focusing in delivering my interpretation of Cuban cuisine.

We’ll meet at the door of my restaurant, Al Carbón, located in Chacón and Aguacate in Old Havana. We’ll meet at 11:00 a.m., one hour before opening time in order to have more privacy. We will spend the entire time in it.

We tried to cancel for 36 hours. For 24 of that the host wouldn’t reply to ABNB. So we went. First we went to “restaurant Ivan” and they sent us around the corner to “al carbon”. They had NO idea we were coming. They scrambled to accommodate us. When I realized Ivan wasn’t there, I asked them and they said “we do this all the time for customer From around the world. Ivan’s restaurant but we teach.” They also told us that we would cook for their customers. The restaurant was open to the public. Not a private cooking lessons at all. We left and then Ivan (ABNB) said the “host” said that our story is a lot and he was there. Currently arguing with ABNB for a refund....

Al Carbon restaurant was being renovated, so the location of the class was changed to Ivan Chef Justo restaurant. Chef Ivan did NOT teach the class. His sous chef showed a lobster tomato salad, which was enhanced by a smoke gun. This is a molecular gastronomy technique, which results in a great presentation but is far from a century-old Cuban dish. Malanga fritters and tostones were prepared. Another chef talked about how to prep black beans & rice. Hands-on was the cooking of shrimp in a sofrito base. The food served, with an avocado salad, was good and a choice of dessert & coffee or tea was offered. The kitchen here is small but fully functional. The dining room is pleasant & beautifully decorated. The best part of the class was the interaction with the translator extraordinaire & server, Lillian. She is charming and a pleasure to be with.
