My hometown of Ioannina is very well known for the preserved monuments and the stories from the otoman era, when Muslims, Jews and Christians lived together, sharing their gastronomy, traditions, music etc. An iconic desert of that period is the "serbet" , the legendary ancestor of the modern "sorbet".
In this tour, we will visit the "Its Kale", the Byzantin and, later on, Islamic acropolis of Ioannina, in the top of the old castle of the town and learn the story behind it.
There, we will prepare the "serbet" dessert in the ancient way, while we will taste two traditional, local teas, Salepi and Mountain tea (sideritis), accompanied by loukoumi (an improved form of Turkish delight) and halva.
We will do all of the preparation of the serbeti, without a refrigerator or ice cream machine, using the ancient technique, taking in the end a cool popsicle flavored with roses or a creamy sorbet as they enjoyed it in the old days, while in the meantime we will get to know each other and exchange experiences.
Finally, we will taste with the accompaniment of sweet red wine, as we see the sun setting from the top of the castle!
