Cadillac is just 14 minute drive from Summertime. Check what time Sunset is and head to Cadillac Mountain after an early dinner. Arriving at least 30 minutes early (but perhaps even an hour or more). This will give you time to walk around and explore the summit path and find the best spot to watch the sun as it sets.
I would also recommend bringing jackets in the back of your car - it can get surprisingly chilly at the top. A fleece and windbreaker should do it. Cadillac Mountain is also spectacular for sunrise...

The Carriage Roads
The Carriage Roads and stone bridges in Acadia National Park were financed and directed by philanthropist John D. Rockefeller, Jr., between 1913 and 1940, for hikers, bikers, horseback riders and carriages. The network includes 57 miles of woodland roads free of motor vehicles, of which 45 miles are within Acadia National Park . These allow seasonal cross-country skiing and limited snowmobiling. Twelve miles are on private land.
