Antonio Park’s eponymous restaurant may be the best known place to munch on high-end maki in Montreal, but it would be unwise to overlook chef Junichi Ikematsu’s Mile End restaurant. The chef’s honed knife is applied to a veritable rainbow of raw seafood, from Arctic Char to uni and snow crab, across sashimi, maki, and temaki dishes that truly let that fresh fish shine.
