The Marker Hotel in Grand Canal Square has a rooftop bar and terrace with great views of Dublin. You don't have to dress up to go there, but you wouldn't want to be wearing runners/sneakers either. One of the best walks in Dublin is Howth Head. From the trail you can look out over the sea, and all of Dublin and Dublin bay. From Sandymount you can take the dart straight there. The town of Howth is also very quaint so you can make a day trip out of it.
