Taxis and safe and not expensive
Whether using Uber or Black Cabs, both are very reasonable for getting around a city especially when there are two or more of you. Uber is cheaper of course but do watch out for the surge times when it is cheaper to flag or call a black cab. City Cabs are a very good cooperative black cabs that have been around for over 90 years in Edinburgh.

Great Museums and play spaces in the city
Many of the museums have areas designed for kids. The Natural Historic Museum on Chambers Street is excellent for kids with lots of interactive exhibitions and housing a Dinosaur. Check out their website for the latest info. The city also has lost of green spaces ideal for children to run around in.
