My favorites are: Sancocho de gallina, empanas, chuleta valluna, y cola endiablada, the flavors are deep and authentic, reflecting the culinary diversity and richness of Colombia.

At the top you'll find a bunch of stands selling juices, snacks and ice creams. A round-trip taxi up there should cost around COP$50,000. Walking to the monument is not recommended.
