The owner has a background in French and Italian fine dining and uses his sensibility to blend salt for the stock like a pro. If you go on Friday, the shop serves a special duck shoyu ramen, which is soy sauce-based. It’s one of Tokyo’s best bowls, so be prepared to wait.
