Earthy and simple, Kajitsu is known for Japanese Shojin cuisine—a multicourse vegetarian meal that’s a cross between fine dining and Zen austerity. The food, the timing, the ceramics—everything is precise and soothing. Only one dish is brought at a time. The sake pairings and Ippodo green tea are incredible. Book a month ahead. There’s no menu here! You just choose the four- or eight-course meal and won’t know what you’ll be eating until it arrives.
