Thirty has a long timber bar with beautiful high stools where you can talk to the baristas as well as the chefs. They’re known for one of the best bacon and egg rolls in Sydney, made with house-cured bacon, sous vide eggs, slaw, and barbecue on a milk bun. As a vegan, I order the Thai-style smashed avocado—toasted bread is topped with this zippy spread full of coriander, chilli, and heaps of lime.
